In fact, hard cheeses are packed with flavor and deserve a place on any great cheese plate. The maturation period of these cheeses is usually measured in years, not months. To ripen a cheese to such an extent, the cheesemaker must take extra care at the outset to use only the highest quality starter cultures, rennet, and milk. Some common hard cheeses include Parmigiano-Reggiano, Aged Gouda, Pecorino Toscano, and Sbrinz. Pag cheese (Paski sir) is a hard type cheese made from the milk of the autochthon sheep from island of Pag. Pag cheese matures for 6-12 months. It has characteristic piquant taste, particular smell and mildly marble and grained texture. It is yellow inside and has golden yellow rind. It crumbles and melts in the mouth. When grated, Pag cheese is used as an addition to many traditional fish and meat specialties. Haven't had much luck finding it online, and when I called the South Shore Meat Market in San Pedro they said they didn't have any. Also, it appears that Sunshine Market is no longer, may it rest in peace. If anyone knows where I can buy this delectable, hard cheese, please let me know! I remember it as tasting kind of like a cross between parmigiano-reggiano and blue cheese.
