I will appreciate very much your help in translating, or I would say - transforming to English language the first name - "Šimon", in accordance with the following context:
Od roku 1342 je například tento klášter považován za "mateřský dům" augustiniánské provincie v Polsku, kdy zdejší převor Šimon Sporer zavedl 12 augustiniánských mnichů do Krakova.

I can imagine that the Augustinian friar was probably addressed as Simon or Simonis in the Middle Ages, but it's just a conspiracy theory of mine :).

Explanation:
At that time, clergy and noble people around Europe were communicating in Latin. So chances are he was known as Simeonus then.

But obviously, if you want the text to be easy to read for the English audience rather than super-accurate with historical date, go with Simon as suggested before.
