I don't believe we need to explain the term, as the remaining of the sentence, i.e. "who takes things as they come and who discovers the future one day at a time." explains the term, so you can use the first two of above-mentioned terms and continue forth.
Alternatively, you can go with "شخصٌ يعيش اللحظة مُتعاملاً مع الأمور عند حدوثِها" for "a “now” person who takes things as they come" and so on and so forth.
