Reference information: Ce n'est pas vraiment un site très spécialisé, mais la définition a le mérite d'être claire : 'Congeler n’est pas surgeler… Congeler un aliment signifie l’amener à basse température, entre -18° et - 25°. Cette opération se réalise chez soi, à l’aide d’un simple congélateur. Surgeler un aliment est une opération industrielle qui consiste à amener les aliments à une très basse température (- 35° à – 196° !) de façon très rapide. Impossible à faire avec votre congélateur donc.' En ce qui concerne le terme ' shock', la traduction est plutôt 'rapide', notamment le 'refroidissement rapide', et donc je propose la 'cellule de refroidissement rapide'.
