Wenn man Assistent sagt, könnte man nicht an einen Assistenzarzt denken? Ist Assistent und ein Praktikant das Gleiche? Ich verstehe Intern im Sinne von Praktikant here.

Your source refers to "Beamte" (civil servants). More specifically, it lists "Beamtenanwärter" in various areas (but no medical doctors or similar) who are bound to see the "Amtsarzt" as part of their professional training. Thus, your source does not support the use of "Referendar" in the medical field.

... sich der AiP nicht unbedingt mit dem "intern" gleichsetzen lässt. Hier käme es auf die genaue Aufgabenbeschreibung an. Wenn (und nur wenn) eine annähernde Übereinstimmung gegeben ist, könnte man allenfalls den englischen Begriff belassen und in Klammern oder als Fußnote die Anmerkung "entspricht etwa dem damaligen Arzt im Praktikum (AiP)" einfügen.

I know that 'Referendariat' is for lawyers and teachers but searched on Google and got confused :). I thought I heard Referendariat also for doctors like 'registrars' in the UK

Das CV listet alle Internships von 1993 - 2004 auf. Insofern müsste es mit dem AiP (Arzt im Praktikum" doch übereinstimmen, oder?
