This seems to be the first use of the word sea-change, according to the Concise OED. Anyway, it seems to convey a fundamental shift or dynamic change in direction in academe on these issues.

原文がすこし曖昧なので、大まかに訳しますと下記のようになるでしょうか。
しかしディマンは「フロイト(以後の)不確定性原理、相対性理論、社会(的)構築主義、ポストモダニズムという学界全体における(理論の)大転換」から最近の生物学と人類学は逃れられないと指摘する。

引用符があるので必要なのかわかりませんが、what she callsの適訳が思いつきませんでした。

I think I have been under wrong impression because of ambiguity in the original - if "sea-change" is "what she calls" and not the entire quote within inverted commas, then it is probably best to put it thus: 『大転換』(二重括弧).

「180度転換」なら今回のcontextには当てはまりませんが、政治経済の紙面ではよく使われます。about face程急ではないが、潮のように進んでいる方向を止めて、全く違った方向に舵をとることに使う表現です。Pardon the mixed metaphors!
