No jargão da indústria (Neugebauer, Cacau Show), “bloomar” é verbo, um horror! Então, uma opção seria não traduzir.

Contudo, existe o fat bloom e o sugar bloom

Eu não traduziria, mas em algum momento do texto deverá ser especificado que nesse caso trata-se do fat bloom, mesmo embora a menção do extender (CBE) tenha a ver com melhorar o fat bloom (e não o sugar bloom diretamente).

O mais correcto na minha opinião, tendo em conta o que no jargão da indústria alimentar o fenómeno descrito no texto é universalmente designado e conhecido como FAT BLOOM, seria não traduzir, colocando no entanto nota explicativa do fenómeno (fenómeno natural que aparece na forma de manchas brancas-acinzentadas à superfície do chocolate devido à migração de gordura) ou nota breve com tradução para PT sugerida pelo IATE (eflorescência gorda).
