The ribs and feather bones are not removed, but loosened by removing the chine bone which binds them, therefore making carving easier.

Por lo que dice el oxford dictionary, parece que se refiere al corte de un costillar dejando la costilla pero sin la vértebra o a lo largo del hueso de la costilla...aquí explica que se trata de "soltar el hueso", como para "deshuesarlo" pero dejando el hueso; no encuentro un equivalente exacto de "chine" en español, pero me queda claro que es un tipo de corte del costillar o espina central (también se usa en pescado, ver el ejemplo):
"Para facilitar trinchado de la pieza, se puede cortar a lo largo del hueso de modo que quede suelto, pero sin quitarlo. Así se podrá deshuesar fácilmente antes de trincharla. Pídale a su carnicero que corte así su pieza cuando la compre."

Ahora lo entiendo bien gracias a la explicaciónde Cecilia. En una chuleta con hueso, por ejemplo, es la esquina donde termina el hueso de la costilla, parte del espinazo; si quitas esa parte, el hueso de la costilla queda suelto... Si el costillar está entero, lo serrarían, como muestra el video, pero si ya está cortado en chuletas la parte del espinazo es el extremo del hueso de la costilla. Creo que eliminar, cortar el espinazo podría valer.
