Encontré este térmo "fabricate the fish", he revisado videos de youtube para ver el procedimiento y se parece mucho a la técnica de filetear, con la diferencia que no lo cortan en porciones. agree  Charles Davis: If you had to reduce it to one word, I think it would be "preparar". "Arreglar" or "limpiar" imply eviscerating and scaling and "preparar" means filleting, at least where I live.
