Explanation:
Since it appears both after asparagus and the octopus legs, I think it may be an instruction on how to cook them (blanching) by briefly putting in boiling water and then ice cold water.
I'm not sure why there is is spelled 'blanche' though... usually it is spelled 'blanch'.

But in Spanish that would be 'blanquear' or 'escaldar'.

Si quieres podrías podrías dejar la palabra tal como está o agregarle "salsa" al principio. O podrías también traducirlo como "salsa blanca", o agregarle la traducción al español entre paréntesis.

disagree  EllieMonteiro: Aunque es correcto que "sauce blanche" es salsa blanca, en este caso se refiere a escaldar / blanquear que es un proceso habitual en la cocina que consiste en hervir unos minutos el producto y pasarlo por agua helada inmediatamente después.
