hacer hendiduras
Explanation:

Notes to answerer
Asker: Muchísimas gracias Rodrigo !! the word hendiduras helped me to fix a name for the process HENDIDO. hendidura.(De hendido). 1. f.

Asker: Robin, IMHO hendido is not cutting or to make cuts.

neutral  Jennifer Levey: The last place you'd want to make cuts in the paper (cuts which will weaken the paper) is along the line where you're going to stitch it.

arrugar

Explanation:
The paper will first be creased (=arrugado), forming a 'partial fold', typically, to about 90º; then 'stitched'; then (finally) folded (=doblado) to close the brochure. If it is 'doblado' too soon in the process, the stitcher won't have room to work and the stitch aligment will be erratic.

Re Audrey's comment bwlow:
'arrugar' doesn't necessarily mean you're going to cruple the paper the way you would if you were going to light a fire with it, or throw it in the waste bin. It is used also to refer to the formation of a single straight partial fold across the sheet so it will be aligned accurately in the stitching machine.
