Devil’s Cut
There may be nothing new under the sun, but Jim Beam’s new Devil’s Cut approximates what people used to do when they bought empty bourbon barrels, added some water and let them sit in the sun to soak out the whiskey trapped in the oak.

Beam’s proprietary process involves heat, limestone- filtered water and agitation and is a little more precise than letting the barrel sit out on the patio for a few days, and the Beam folks then blend the extracted liquid with six-year old bourbon to create 90-proof Devil’s Cut. “The name“ says Beam’s Greg Sellers, “is a play on the ‘angel’s share,’ the 30 percent or so of a full whiskey barrel that’s lost to evaporation during aging.”

Master distiller Fred Noe, son of the legendary Booker Noe, was the man who decided to try extract the latent whiskey, and the resulting bourbon — it’s still Kentucky straight bourbon, by the way — is big on tannins and woody notes, but not at all harsh. “People are amazed by the full flavor followed by a soft finish,” Sellers says. “It’s a big flavourz, but it’s not hot.”
The two terms 'angel's share & devil's cut go together and what the angel takes means what has evaporated & the devil's cut is what is left over. It seems to be two questions but each term is the obverse of the other.
