When one flies long distances, it is now common practice to show to the passengers the route being flown, what height one is at, what the temperature is outside (usually a chilly minus 30°C!), how far it is to one’s destination and the estimated time of arrival. Any good pilot has to know his present position and his progress from his original starting point in order to ***work out*** his route carefully, whether he has enough fuel, effect of headwinds, tailwinds, etc.

How I would understand this. Before flying, he must see where he is going to fly and how long it will take, etc. This is how I understand 'work out' in this sense.
