piercing the doughnuts Explanation: I assume this is a recipe for a jam- or custard-filled doughnut. The way these doughnuts are made, after frying them they are injected with the filling. If you accidentally poke a hole in them, the injected filling my ooze out that hole later. I think that's what it is. -------------------------------------------------- Note added at 16 mins (2010-09-17 09:31:37 GMT) -------------------------------------------------- Actually I've just seen a recipe which warns of poking, but where the jam is placed inside the dough prior to frying (http://allrecipes.co.uk/recipe/4505/jam-doughnuts.aspx) . In any case, the "not poking" advice is clearly to stop the jam from leaking.
