Finnish term or phrase: ylikypsä häränliha
An item at a restaurant is described on the menu this way:

tarjoillaan kurpitsaleivällä, salaatin, punajuuren, marinoidun punasipulin ja ylikypsän häränlihan kera
"

Would "ylikypsä" normally be translated as "overcooked" in this context, or is there a more common term?

In this context, I'd say that it's either slow-cooked beef or pulled beef, depending on the consistency. Or even just "tender". Basically, my understanding is that "ylikypsä" (when advertised as such) meat is cooked in slow oven/smoking oven until tender. Although a literal translation, "overcooked" would be a negative description, bringing to mind dry meat, and I'm not sure you could use "overripe" for meat products.

Asker: Thank you for the quick response. However, when I do a web search for "overripe beef", most of the relevant results (there are only a handful) seem to come from Finland, and are therefore suspect of being awkward translations of precisely this phrase ("ylikypsä häränliha").

agree  Didier Declercq (X): I believe "overriped" meat is called dry-aged, and that this process is called raakakypsytys (lit. raw ripening). Raakakypsytyksessä lihan omat entsyymit hajottavat lihan ja seurauksena liha mureutuu ja maku voimistuu.
