I have to close this question without grading as the answer is both "gather" and "collect" depending on context.

I can see it too, and from your examples use collect, but don't use collect for "collecte" when "collecte" means gather. Don't hesitate to use gather instead, because French "collecte" can mean gather.
Example:
opérations de collecte de documents et de renseignements
efforts to gather material and information

I can assure you that I have not done that as I've just spent the last hour changing each segment one at time with either gather or collect

I even had an ambiguous segment which I commented for the client. It was:

Relation entre le terrain et l'organisation qui collecte ?

Yes, gathering can mean bringing things together into one place. Dirt gathers in corners. However, because it can also mean gathering the harvest, it is a term that would cause confusion here. The real question is whether "collecte" means collection, e.g. what happens when the lorries come to collect the harvested produce. When they do the "collecte" the "éboueurs" collect the rubbish, they don't "gather" it.

I can see the picking up in sequence in "collecte de la matière premiere végétale", but without any context, this could also mean bringing together in one place. I think collecteur is collection point though.

The term "to gather" is a more poetic alternative for "to harvest". However, "to collect" or "collection" are not alternative terms for "to harvest" or "harvesting", "picking" etc.

of course you can but I wouldn't know what to do as I'm now sure it is both.
In that case, I would flick a coin and give it to the "winner" but in the glossary, I'd put both suggestions in.

I would second the term "gather", and would not shy away from using "collection of raw materials", or post- collection. I'm not sure why gather would be preferred to collect if it happens after the fact, as they both refer to the bringing together of things.

I've now gone back to the text with your ideas and decided that it could be both depending on the sentence

Relation entre le terrain et l'organisation qui collecte ? (probably "collect")

Post-collecte (tri, vannage, conditionnement…) (probably "gather" as you can't do anything with the product after it has been collected, so it must be "gather"

I think they mean "gathering of raw materials" in this context, otherwise they would have used "récolte" (harvesting), like in "centre de récolte et de transformation".
