I understand that this is each borrower's share of the insured mortgage in a joint mortgage situation, but was wondering if there was a corresponding technical insurance term like quota or quotient or whatnot.

agree  Ph_B (X): Aargh - I was actually preparing an answer with "percentage". In an insurance context, quotités are often mentioned in the form of a percentage. I've got ex. and refs. and was trying to get all this in readable English, but won't bother now. :-)
