This is taken from specifications for a service involving the printing, folding and enveloping of a mailing campaign:

Without this phrase, I understand that the check needs to make sure that the address is correctly lined up in the window of the envelope, but I have no idea as to what the "après traçage sur les 3 côtés" could mean.

detection of 3 edges
Explanation:
I believe this refers to the use of an optical edge-detector to check the position of the recipient's address label with respect to the window of the envelope. If the detector can "see" three edges, then the label is considered to be correctly position on the sheet. (It might be thought that 2 edges would be sufficient, but 3 are needed to check that the labels are correctly oriented (portrait/landscape) and not crumpled or otherwise distorted.)

Where separate recipient address labels are used, there is often an outline box or other graphic printed on the sheet, slightly larger than the label, to facilitate the edge-detection process.

As suggested in the ST, this only refers to a recipient's address that's printed on a separate label affixed to the sheet (support de l'adresse du destinataire) - the sender's address will always be positioned correctly because it is printed on the sheet itself.
