Explanation:
Mon « Dictionnaire Encyclopédique Universel » donne « subsaharien » (un mot) pour l’adjectif.

Puisqu’il s’agit d’une région mal définie, et non pas du nom officiel d’un pays, d’une province, etc., je crois que la minuscule s’impose (cf : Afrique du Sud (nom de la république) vs l’Afrique australe (la partie australe du continent)).
