I have found a different document on the internet which seems to be dealing with the same thing:

This is my take: Accounting on a quantitative basis / products accounted for on a quantitative basis

However, this sounds clunky and I am still unsure as to the meaning of the German - does anyone have any pointers?

I am convinced that the main point of this term is the fact that there is a traceability, provability of the quantities which are processed within a workflow.

So we can lend a term from the world of accounting or tracing of payments (used in the banking sector). Instead of an "audit trail" you can use here:

quantity traced or quantity controlled

for the term "mengenbilanziert".

IMO this emphasizes the fact that the quantity should be traceable from the source to the supermarket/end consumer. And not e.g. buying X tons of coffee and then mingling with non certified beans.

This is used as evidence for the customer that he will get a fair value for his money.

Mengenbilanzierung = accounting of quantities
mengenbilanziert = (with) quantities recorded in the accounts

"quantity traced" (bzw. "quantity controlled") geht wohl in die richtige Richtung.
Denn mit "accounting" ist hier anscheinend nicht die buchhalterische Erfassung gemeint.

But what do you think about a term following the world of account audits and tracing of payments.

Instead of an audit trail (or a paper trace of a payment) you could choose:

quantity traced or quantity controlled

for the term "mengenbilanziert".

IMO this emphasizes the fact that the quantity should be traceable from the source to the supermarket/end consumer. And not e.g. buying X tons of coffee and then mingling with non certified beans.

I am convinced a native speaker could fine-tune.

I'm not clear whether Bilanzierung means accounting or balancing. Menge is presumably quantity.
