Reference: conchiertes eis Reference information: Conchieren heißt soviel wie langsames, ständiges Rühren. Wird Eis auf diese Weise auf seine Zieltemperatur von minus 18 Grad abgekühlt anstatt, wie bisher, in ruhendem Ruhestand, sind die Eiskristalle und Luftblasen, die sich dabei bilden, wesentlich kleiner. Dadurch hat das Eis von vornherein eine höhere Stabilität und eine cremigere Struktur. Es muss also weniger Fett zugegeben werden, damit die kalte Leckere ihre optimale Konsistenz erreicht. Das Ergebnis: Bis zu 40 Prozent weniger Kalorien ohne Geschmacksverlust.
