"Ancora farai ben cuocere l'agresto tanto che scemi una debita porzione, e faccia un poco di corpo come una pasta; deesi prima salare, e accanto 'adoperi in pezzi come altrui vuole. Ancora l'agresto che si conserva secco si fa così: tolgasi l'uva agrissima e acerbissima, pestala bene e spremila, e fa' bollire quella colatura tanto che 'assodi; dipoi ponlo in su gli asserelli a seccare al Sole, e riponlo a tutti gli usi in vaso di terra cotta invetriato. Altri mettono a indurire l'agresto spremuto al Sole caldo, poi ne fan confaccette, e serbanlo a quel modo in lato asciutto, e l'uno e l'altro in pestandosi e spremendosi, si dee insalare a discrezione".

This is a passage written hundreds of years ago describing the ancient ritual of preparing verjuice, a condiment made from sour grapes that was highly prized during the Middle Ages. Deesi seems to be an older form of a verb, the meaning of which I can't glean from this context. Thanks!
