Si ebbe parimenti lo sviluppo della transumanza, già praticata in epoca romana, ossia lo spostamento stagionale delle mandrie fra pascoli invernali ed estivi. Nella stagione fredda il bestiame veniva portato nelle zone marittime, dal clima più mite, quali le aree costiere paludose della Maremma toscana e dell'Agro romano; in estate le mandrie venivano spostate lungo le vie della transumanza verso le regioni interne, appenniniche, quali per esempio le aree montuose di Abruzzo e Molise.
