Japanese term or phrase: α化物
How would you translate α化物 (the symbol before 化物 is an alpha letter, don't know if it will show correctly in the forums) in the context of food processing?

An example phrase from the text: 凍結乾燥部分を構成する材料としては、例えば、小麦粉、米粉等の澱粉もしくはこれらのα化物

Gelatinous substance

Explanation:
I found that α化 is 糊化 http://kotobank.jp/word/α化, which is gelatinization, so my guess would be that α化物 can be translated as something like "gelatin(ous) substance" or, maybe, "gelatinous form (of the product)".

The sentence is about using either starch (澱粉) or gelatinized (α化物) versions of the substances (小麦粉、米粉).

agree  Marc Brunet: beautiful research and finds! one question: judging from your experience, would the 'alpha' symbol signify just 'pre-' anything in the chemistry field, and require the context to render it as you found it?
