Cooking / Culinary / recipe for roast leg of lamb
Norwegian term or phrase: rundbein
In a recipe for a slow-roasted leg of lamb with garlic and herbs:
Anbefaler ferdig utbeinet lår, og gjerne rundbeinet.
So the recipe recommends a boned leg. I'm guessing that rundbeinet means the knuckle/shank end, but can anyone confirm this?

I now believe that rundbeinet refers not to the bone itself, but to the way that the bone is removed from the leg. I believe the correct translation is tunnel-boned.
