Hi,

This is from DEX online.

caltabóş, caltaboşi, s.m. Un fel de cârnat făcut din măruntaie de porc amestecate cu orez şi cu mirodenii.

My problem is that according to my Romanian-English dictionary, caltabóş is black pudding, which is made with blood. However, there is no mention of blood in the above definition.

Romanian sausage


Explanation:
In DEX there is also this definition= carnat facut din carne de porc, orez, ceapa, piper si alte condimente. Este mancare tipica de sarbatorile Craciunului. ( sausage made of pork meat, rice, onions, pepper and other spices)- which is exactly what I think it is. My parents make it every year for Christmass. They also make Leber- Liverwurst ( german sausage) which is made of pork liver and other spices.
Also in the same definition (DEX) it says :" se gandeste la klubasa" related to kielbasa- the polish sausage. So caltabos is closer to the polish sausage kielbasa than to the german liverwurst- that is mainly made of liver.

In Muntenia, de unde provin, caltabosul de prepara din maruntaie de porc (de regula, inima, plaman) care intai se oparesc pentru a fi tocate mai usor, carne de porc, ceapa, piper, alte condimente. Dupa introducerea amestecului in intestinul gros, caltabosul se pune intr-un vas cu apa fiarta si se lasa sa fiarba usor, dupa care se preseaza cateva zile pentru a elimina cat mai multa apa. Ulterior se pune la afumat. Asa incat asemenarea caltabosului cu lebarul este inexistenta.

haggis= o mancare scotiana gatita in vezica biliara a unei oi; contine ovaz.
alt produs similar este cel german peperami cu un gust asemanator, doar ca nu contine orez .
Nu cred ca exista o traducere exacta, pt ca este un produs tipic romanesc (desi exista produse similare in alte tari), de aceea cred ca numele trebuie sa descrie produsul.

Intr-adevar, caltabosul nu e neaparat afumat, asa ca l-as (re)traduce ca 'caltabos - a romanian sausage-like food made from giblets (maruntaie)'
