I have a recipe for empanadas that calls for "zapallo amarillo". I know this is some type of squash, but I'm not sure which one. I'm thinking maybe banana squash because it's yellow. Does anyone know what kind of sqash to look for in an American market that would be equivalent? I believe the recipe is from Central or South America. I was trying to find a recipe for the most delicious empanadas de zapallo that I used to eat in Costa Rica. But I'm not sure what type of squash it is.
