El cochinillo es una de las aportaciones gastronómicas más importantes de Castilla. Su consumo se produce durante todo el año pero es en las fechas Navideñas que alcanza el máximo apogeo.
Para el asado de cochinillo se precisa un animal menor de dos años, manteca o aceite de oliva y horno de leña. El buen gourmet aprecia el laqueado natural de la piel externa, la dulzura de la carne y su suavidad.
