Ingrédient : Chocolat noir Matériel : Un cul de poule, Un fouet ou une spatule, Une casserole, Deux bols en verre ou en inox Descriptif : Séparer le chocolat en deux récipients : l’un contient un tiers du chocolat, l’autre les autres deux tiers. Faire fondre au bain marie les deux tiers sans ajouter d’eau ni de matière grasse (technique p. 8). Une fois le chocolat fondu (il doit avoir atteint une température supérieure à 45°C), incorporer le tiers restant en dehors du feu de façon à faire descendre la température à 28-29°C. Mélanger jusqu’à obtenir une texture homogène matte. Poser sur un bain-marie quelques instants pour le travailler facilement et le rendre plus fluide (température de 31°C).
