Tostamos harina fina en una sartén siempre cuidando que no se queme. Añadimos un poco de agua a la harina tostada y ligamos bien a fuego suave. Cuando esté bien ligada la harina añadimos esta preparación al jugo que habíamos reservado antes y hacemos hervir de nuevo. Volvemos a colar y reservamos ese jugo de carne.
