Masas batidas: masas sometidas a un batido, resultando masas de gran volumen, tiernas y suaves. Elaboradas fundamentalmente con huevos, azúcares, harinas o almidones.
Con ellas se elaboran bizcochos, melindros, soletillas rosquillas, mantecadas magdalenas, bizcocho de frutas, genovesas, planchas tostadas, postres, merengues, brazos de gitano, bizcochos de Vergara, bizcochos de Viena, tortas de Alcázar, capuchinos, piropos, palmillas, búlgaros, tortilla, biscotelas, etc.
L'unico riferimento è a una torta salata tipica della cucina bulgara ma non so se sia inerente al testo.
