Milano sta al panettone come la pizza sta a Napoli. Poche altri prodotti hanno un’identità così territorialmente e culturalmente definita. Tracce vi porta a spasso fra alcuni dei luoghi milanesi che hanno fatto (e fanno tuttora) la storia del panettone.
Il viaggio comincia con un pò di letteratura. Negli archivi della Biblioteca Ambrosiana, disponibile per la consultazione, c’è un manoscritto della seconda metà del ‘400 ad opera di Giorgio Valagussa. Si parla del rito del “ciocco” presso la dimora dei nobili Sforza: secondo questo rito la vigilia di Natale si metteva ad ardere un grosso ciocco nel camino (si dice durasse fino all’epifania), e nel contempo il pater familias affettava tre grandi pani di frumento, porgendone una fetta ad ogni membro della famiglia. Questa testimonianza, che si riferisce ad una pratica già allora antica, è la prima traccia scritta e quindi storicizzabile del panettone milanese. Leggere per credere.
Translation - English Panettone belongs to Milan the same way that pizza belongs to Naples. Few products can boast an identity so clearly defined, both geographically and culturally. Tracce takes you for a stroll among some of the historical Milanese locations that still carry on the tradition of this quintessential Italian cake.
Our excursion begins with some literature. In the archives of the Ambrosian Library, accessible to the public, there is a manuscript from the second half of the 15th century by Giorgio Valagussa. The texts refers to the ritual of the ciocco (log) in the noble house of the Sforza. According to this ritual, a huge log was put to burn in the hearth (some said it kept burning until Epiphany); at the that moment, the patriarch of the family sliced three large loaves of wheat bread and offered a slice to each member of the family. This description, referring to a practice that was already old, is the first written account traceable to Milanese panettone. Reading is believing.

Il Mediterraneo è un insieme di città che si tengono per mano. Questa felice intuizione di Braudel sta a significare che a ciascuna delle città deve essere data l’opportunità di valorizzare il proprio patrimonio identitario, opportunità da assicurare non solo alle grandi aree metropolitane, ma anche alle “città minori”, minori, però, da intendersi solo in riferimento alla dimensione demografica, non certo in riferimento al valore storico e culturale che spesso raggiunge l’alta qualità proprio nei piccoli centri. Nell’ambito di queste piccole old towns, un ruolo significativo compete alla città di Enna, che costituisce un significativo emblema urbano di recupero del mito mediante la sinergia tra Kore, come divinità dell’età antica, e Kore, come università del presente e del futuro. L’ateneo di Enna, difatti, nonostante la recente istituzione, si è già distinto in una poliedricità di settori strategici - qualificandosi non solo come fattore di attrazione per studenti provenienti anche da altre provincie, ma anche come componente di importanti reti interuniversitarie mediterranee, come elemento propulsivo di un progetto per il rientro in Italia di beni culturali di valore assoluto (la Venere di Morgantina), come struttura cerniera per il partenariato tra imprese – ha scelto, come denominazione, come propria icona e come simbolo di unicità, il richiamo alla dea Kore, il cui profondo significato sta nel passaggio dal morire al rinascere. Questa scelta costituisce un esempio di eccellenza di una città universitaria che punta, come modello di valorizzazione territoriale, sulla rivitalizzazione del genius loci, sulla riscoperta delle radici, al fine di mettere in atto una promozione autocentrata e autopropulsiva del territorio. Attraverso questa significativa interrelazione tra memoria e sviluppo sostenibile, Enna, definita storicamente “umbilicus Siciliae”, può riacquistare, rispetto alla più grande isola del Mediterraneo, quella centralità che l’aveva caratterizzata nella fase dei Sicani, in quella greco–romana e in quella medievale e che aveva poi perduto in età moderna e contemporanea, allorché si era trasformata in “periferia dell’impero”.

The Mediterranean is a set of cities that is bound together. Braudel’s inspired intuition means that each city should be given the opportunity to add value to its own identity and heritage. This opportunity should apply to the minor cities as much as to the greater more well-known metropolitan areas—“greater” in terms of demographics, but not in terms of historical and cultural value, In the context of these small “old towns”, a meaningful role belongs to the city of Enna, which is a significant urban emblem of the recovery of myth through the synergy between Kore as a deity of the ancient world and Kore as a university of the present and the future. The Kore University of Enna, despite its recent establishment, has already proven itself in multi-faceted strategic sectors, thereby not only attracting students from other provinces, but also becoming a part of important Mediterranean inter-university networks. The University acts as a driving force for a plan for the return to Italy of priceless cultural assets such as the Morgantine Venus; and has taken on the role of connecting structure for partnerships among private companies. The university has chosen Kore as its name, its icon and symbol of its uniqueness This reference to the goddess Kore—also known as Persephone—is deeply symbolic of the passage between death and rebirth. This choice is an example of excellence in a university town, whose model for valorization aims to revitalize the genius loci, to rediscover its roots in order to create a dynamic autonomous promotion of its territory. Through a vital -relationship between memory and sustainable development, Enna, historically defined as “umbilicus Siciliae”, may once again acquire , as the largest island in the Mediterranean, the characteristic centrality it possessed at the time of the Sicans, during the Greco-Roman period and during the Middle Ages; this focus was subsequently lost in modern and contemporary times when Sicily became the “periphery of the empire”.

Source text - Italian I più recenti contributi (…….) in tema di corporate responsibility sottolineano le opportunità che le imprese possono cogliere nel basare la propria governance su un approccio di stakeholder engagement anziché limitarsi a una mera logica di stakeholder relationship management. Basare la corporate governance dell’impresa su processi di engagement degli stakeholder porta infatti ad ampliare il concetto di reputazione aziendale e a riformulare il percorso per svilupparla ai fini del successo delle imprese.
Questo articolo approfondisce il rapporto tra corporate governance e reputazione nella logica dello stakeholder engagement. In particolare viene proposto un concetto di reputazione utile a valorizzare appieno le potenzialità del management e della comunicazione. Nella prima parte viene illustrato come la reputazione sia tradizionalmente concepita nella letteratura sulla governance indicandone i punti di forza e i limiti. Nella seconda parte viene proposto un approccio alternativo alla reputazione coerente con lo stakeholder engagement e vengono descritte le implicazioni manageriali e di comunicazione che ne derivano.
Translation - English Recent scholarly contributions (…) about corporate responsibility emphasize the opportunities that business can seize by basing its corporate governance on a stakeholder engagement approach rather than limiting itself to a mere outlook of stakeholder relationship management. Corporate governance based on the processes of stakeholder engagement leads to a broader concept of corporate reputation as well as a reformulation of the steps necessary to enhance it with the purpose of achieving greater success for the company.
This article examines the relationship between corporate governance and reputation from the theoretical framework of stakeholder engagement. In particular, a concept of reputation that serves to exploit the full potential of management and communication is proposed. In the first part, the traditional conceptions of reputation described in the literature on governance are analysed according to their strengths and limitations. In the second part, an alternative approach to reputation is proposed, consistent with the principles of stakeholder engagement. Lastly, the managerial and communication implications of this alternative approach are discussed.
