What would be the translation for
עבודות גמר and תוכניות עדות in the context of architecture?
I can't imagine עבודות גמר being "final work/project".

I see no problem with that.

No idea what the other one is: can you give more context? Perhaps they are demonstration plans - plans used by the students to demonstrate their skills.
