Can anyone throw some much needed light here? I thought the meaning of 'nervosa' was probably 'stressed' until I read the next sentence which also refers to stressed skin:
DONA VITALITA‘ STRAORDINARIA IN CASO DI:
pelle irritata, nervosa o secca,
sintomi di stress quali impurità o arrossamenti,
bisogno di una cura accurata della pelle,
bisogno di rivitalizzazione spontanea della pelle

I am quite confident on the translations as I found several adjective to describe skin problems.

just because sensitive means sensibile, but hyper gives the idea of "too much"

I would call "irritata" sensitive. The meaning of nervosa / nervous would imply to me the way sensitive skin can so easily flare up or shows an allergic reaction such as redness or rashes. I.E a personification of excitable, and perhaps troubled.
Example sentence:
"62% of women say they have skin that is REACTIVE, sensitive, irritable and intolerant to all cosmetic products and even water. 32% of men also complain of skin discomfort. How can this sensitivity be soothed? Advice from a dermatologist."
"Often, these people have flushed or blushed easily their whole lives and have very sensitive and REACTIVE skin."
