A mid-surface is analogous to the one-dimensional medial axis of a planar shape and can be defined as the surface which includes all the points at equal minimum distance from at least two different points on the object boundary.

: Your final suggestion would be the better solution if it is being used as a preposition, but of course, it might also be a noun! I am terribly unhappy about that 'surface moyenne', it doesn't ring at all true for your definition of 'mid-surface' above
