Sorry to continue asking without closing previous questions!
I am getting quite confused. I know that some bacteria in the mouth produce nitrite or N-nitroso compounds (NOC) or nitric oxide (NO), but I don't know about bacteria that produce nitric acid. I wonder if the 硝酸 here is referring to something other than nitric acid? I believe 唾液中に分泌される硝酸 refers to salivary nitrate, but are nitric acid and nitrate interchangeable?

More... The source document says that salivary nitrate is converted into 硝酸 nitric acid by bacteria in the oral cavity. I find a lot of references on the conversion of nitrates into nitrites. But this is not about that is it?

Dear Joss,

If you accept my opinion, please forget about nitrites. There is nothing about it in this context. Nitrites are salt of nitrous acid, a very unstable compund, ready to be oxidised under various circumstances.
The given context can be translated like this:
Context
*野菜には硝酸塩が多く含まれるものがあり、これらの野菜を摂ると吸収された後に唾液中に分泌される硝酸と硝酸塩は増加するといわれています。
That is: there is a large amount of nitrates in vegetables. It is considered that when eating these vegetables, after absorption, the amount of nitric acid and nitrates secreted with saliva increases.

*胃酸が中性になると胃内に硝酸産生細菌が増えます。
Upon neutralisation of the gastric acid, there is a proliferation of nitric acid producing bacteria in the stomach....

Generally "documents about healthy people in general" tend to give off academic atmosphere, but just between you and me they are actually not so academic in many, or most, cases.
