hello, I'm translating a certification letter from an American University, which states: "She is a Post-baccalaureate student in Spanish..." Could this mean Post Graduate studies? or undergraduate? meaning she just finished high school?

Baccalaurate is the degree you get after finishing college so she is past that stage.

Estudiante de posgrado en Español

Baccalaureate is a bachelor's degree. So a post-baccalaureate student would be someone who has already received a Bachelor's degree.
