Die Auberginen gut waschen und am Stielansatz rundum abschälen, dabei den Stiel nicht entfernen. Die Auberginen halbieren und auf der Schnittseite ein paar Mal der Länge nach einritzen, jedoch nicht durchschneiden.

la polpa, immagino, ovvero inciderla ma fare attenzione a lasciare intatto uno strato inferiore, per evitare che fuoriesca il ripieno....da noi si chiamano "melanzane a barchette"
