Als Überfalz oder Greiffalz bezeichnet man die überstehende Kante eines gefalzten Bogens, die ein Öffnen des Bogens während der maschinellen Produktion ermöglicht (z. B. im Sammelhefter). Befindet sich die überstehende Kante an der vorderen Bogenhälfte, spricht man von Vorfalz, bei der hinteren von Nachfalz.

I don't have any technical knowledge of saddles stitchers. Would this be, perhaps, front over-fold?

I'm not sure about this, but it looks like a possibility.

work-and-tumble
A layout in which both sides of a sheet can be printed using a single plate. The paper is flopped after the first side is printed so that the trailing edge of the first printing becomes the gripper edge for the second printing. The same side guide is used for both passes.

gripper edge
The edge of a press plate (or of the flat) corresponding to the lead edge of the press sheet clamped by the grippers during the printing cycle.
The grippers of the printing press move the paper through the press by holding onto the leading edge of the sheet; this edge is the gripper edge.
