Hi everyone,

Thankfully for all concerned, this is my final query!

The following is taken from the description of an additive mixture:

Modo de empleo

La cantidad correspondiente a la dosis de empleo indicada se disolverá junto con la ***sal adecuada*** en el líquido de gobierno.

Explanation:
THis again requires further clarification from the client.
It could well be as Lisa says "approriate (or adequate) amount of salt" is perfectly fine but it could also be referring to the type of salt (therefore "amount" would be quite incorrect). Whether you add NaCl (Na+ + Cl-) or MgCl2 (Mg2+ + 2x Cl-) plays a very significant role in the stability, properties, etc. of the solution and its components. It's a question of a cation (Na+) versus a dication (Mg2+) which can be hugely influential in the emulsion / foam formation, rate of separation (settling in suspensions or breaking emulsions), the overal stability of the foodstuff. You should really confirm with the client whether they mean the "type" of salt. THe correct amount is also important but is dictated by the type....
It is difficult to explain the importance here, and more than likely Lisa's answer is correct and the original simply refers to the conc. of NaCl (i.e. it is assumed that salt = NaCl), but any formulation chemist worth his or her salt ( ;) ) would clearly state the type of salt being used.
WIthout further clarification I would consider "appropriate salt" to leave things more open.
