Si l’inventaire anniversaire (inventaire contradictoire servant à calculer la démarque) ne coïncide pas avec un des inventaires quadrimestriels, un inventaire supplémentaire est réalisé.
At first I just assumed this meant annual inventory, but I think it is something else.

I believe this is simply describing the annual inventory. The others referred to in the original are compared to this one, which takes place at the same time each year, hence the use of "anniversaire" as "annuel", whilst yearly, does not confirm that it is carried out on the same date each year.

Contract anniversary inventory
"Demarque" is the "shrinkage" or "inventory shrinkage" - the amount by which the stock has diminished due to theft, breakage, unconformity, etc.

Maybe what is meant here by "anniversaire" is the anniversary of the supply contract between the supply and the client: in which case, the use of "inventaire contradictoire" fully makes sense (see http://www.proz.com/kudoz/french_to_english/bus_financial/60... for example), because this need not occur at the sametime as the quarterly inventories of the client (the retailer). So the client's and supplier's representatives would perform the inventory to see what has been the actual wastage of stock in order to adjust the amounts of products to be paid for.
If it's this, then something of "contract anniversary inventory" should do.

fiscal inventory
The fiscal inventory is different than the annual inventory. A fiscal inventory is often necessitated by reporting requirements as steps to get a figure for the P/L (profit and loss) of the operation, while annual inventory is only for internal control to check for stocking level etc..
