From a menu:

"Solomillo de ternera con setas y cebollitas en civet al momento"

I understand en civet to mean a kind of stew often used with game, made with wine and onions. But I'm not sure whether to leave it as civet in English and what to do about the al momento bit.

civet (or stew) of... cooked to order

"al momento" is "cooked to order". I think you could either leave civet or change it to stew. If you leave civet though you might need to add some clarification.
