The fish is be-headed, gutted, de-iced and de-scaled. It is then graded and filleted by hand. After the processing phase, the fish fillet is trimmed for blood, bones, fins, black membrane, fleas, loose fish scales and sorted. It is then packed and frozen in cold storage.[2]

Porzionato/ in porzioni

Cercando in rete mi è sembrato di capire che ci si stia riferendo a dei filetti già preparati in porzioni specifiche. Il video mostra il funzionamento di una trimming machine che dovrebbe appunto servire a formare delle porzioni (di filetti di pesce in questo caso) più o meno simili.
