There are plenty of examples of this term on the 'Net, but not in exactly this context; I've found it mentioned indirectly in this context, but worryingly, not in any native-FR documents.
Many just refer to it as a 'pavé / panneau LCD' — but of course, that wouldn't do here, as this already goes on to specify what it consists of!
In any event, it is a 'module' and its role is to make it possible to 'project' — there will be one or more in any projector, but in this instance, we know it is an LCD one.
No image processing takes place in this module — that's already been done by the preceding circuitry.

I am myself an electronics engineer, and have work a great deal with video projectors over many years.

Discussion
I half suspect this is probably Chinglish, as other bits of it don't quite ring true. Be that as it may, there is a component in a video projector that could, with a little imagination, be referred to as an 'image unit' — the bit that produces the actual image.
In response to your closing comment — yes, one might refer to it as a 'module' (a term I've already suggested, which often best translates EN 'unit'), and one could say it 'produces' or 'forms' the image; however, I don't quite know where you get the idea of 'prise'? This is a projector, throwing an image onto a screen, nothing to do with actually taking pictures ('prise de vue' etc.) — cf. my comment to Abel.
It is of course nothing to do with processing the image signal per se.
