This is the only way to make headaway into the mystery that is Italian and Biritish/American cuts of meat.
I did a whole website on this years ago and spent more time looking at pictures of cows, sheep and pigs with dotted lines all over them, then lookig up reliable recipe sites for confirmation.
I came to the conclusion that Italians have complicated the matter by a) having more precise cuts of meat and b) having so many differnt dialectal terms for meat.
But the Cappello del Prete comes from where chuck steak comes from on the cow - on the shoulder, a cheap cut good for long patient cooking (in any language!)
