By far the oldest technique to prevent potential microbial contaminants is "barrel shaving". This involves the removal of approximately 5 to 6 mm of the barrel interior surface by shaving, planning or routering disassembled barrels [5]. Direct benefits of shaving (and re-toasting) of the wood is the removal and killing of microorganisms that occur on and in the scraped wood, thereby reducing the risk of contamination. Although a centuries-old technique, nowadays it is receiving renewed attention. However, one should be cautious not to compromise the integrity of the barrel when applying this technique.
