German term

Wiederbeschaffungsdauer

A replacement should be made within 12 to 14 days? Does it mean the damages will be paid within this period? Or that they work on the assumption that the person making the claim will replace the vehicle within 12 to 14 days, and therefore base car hire costs on this assumption?

time required to obtain a replacement

I don't think it says anything about when the damages will be paid, only about the period of time covered.

The logic of the last sentence eludes me - if it takes 12-14 days to get yourself a new car, why are they only paying for a rented car for 6 days?

time to arrange a replacement

I think the point of view here from the insurance company is that they were not willing to pay rental car costs for 12-14 days, and instead only paid for 6 days
