The yarding of the mob over in the home paddock across the rise from the house had been completed.

J'essaie ici de trouver une formulation qui ne soit pas trop redondante (home/house) et pas trop lourde.

I initially wanted to go with "jouxtant la maison" or "attenant à la maison" but I was wondering if there was a specific term.

I don't know anything specifically about the field ... but 'home' often doesn't mean 'where you live', but in the sense of 'where someone is based' — 'the main one they go back to' etc. etc.
So there should really be no conflict or redundancy here between the notion of 'maison' and that of 'd'affectation' etc. Cf. 'home port' = 'port d'attache', and also railways 'home / distant signals' etc.

enclos domestique

The "home paddock" referred to here is part of the property the "house" is on.
enclos domestique easily and clearly conveys that.
