I wonder what is the correct term for "light cream" in waffles, biscuits etc. e.g. "waffles with light cream"

smântână slabă

The Romanian definition for cream is a "Produs alimentar gras". So the right translation for light in this context is "smântână slabă", much better as the posible alternatives "smântână dietetică" or "smântînă uşoară"

You mean in the meaning of "cremă"? like cremă subţire?

the meaning here is mostly for "krem", not "smântână"; there is between the wafer sheets some cream that is light, meaning not very fat, tick etc.
