letteralmente potrebbe essere la massa/il peso a vuoto, ma trattandosi di una pentola, immagino che vogliano sottolineare il fatto che la ghisa è pesante e permette di avere una pentola che resta stabile sul fornello, senza spostarsi mentre si mescola.
